Royal Afghani Kabuli Pulao – A Traditional Aromatic Delight

Ingredients

For Rice

  • 3 cups premium basmati rice
  • Water for soaking
  • 1 tbsp salt

For Meat

  • 1 kg lamb or beef
  • 2 large onions (sliced)
  • 3 tbsp cooking oil
  • 1 tbsp ginger garlic paste
  • 1 tsp black pepper
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt to taste
  • 5 cups water

For Topping

  • 2 carrots (julienned)
  • 1 cup raisins
  • ¼ cup almonds
  • ¼ cup pistachios
  • 2 tbsp sugar
  • 2 tbsp butter or oil

Ingredients

Step 1 – Soak the Rice

Wash the basmati rice thoroughly and soak it in water for 30 minutes.


Step 2 – Cook the Meat

Heat oil in a large pot. Add sliced onions and cook until golden brown. Add ginger garlic paste and meat. Cook for 5–7 minutes until the meat changes color.

Add salt, black pepper, cumin powder, coriander powder, and water. Cover and cook until the meat becomes tender.


Step 3 – Prepare the Rice

Boil water in a separate pot with salt. Add soaked rice and cook until 70% done. Drain the rice.


Step 4 – Prepare the Sweet Topping

Heat butter in a pan. Add carrots and cook for 2 minutes. Add sugar and raisins. Cook until slightly caramelized. Add almonds and pistachios.


Step 5 – Layer the Pulao

In a large pot, place the cooked meat at the bottom. Add rice over the meat and top with the caramelized carrots, raisins, and nuts.

Cover tightly and cook on low heat for 20–25 minutes.

Serve hot with yogurt sauce, salad, or traditional chutney for an authentic Afghan dining experience.
