Ingredients
For Rice
- 3 cups premium basmati rice
- Water for soaking
- 1 tsp salt
For Chicken
- 500g boneless chicken strips
- 1 tbsp soy sauce
- 1 tsp chili flakes
- 1 tsp garlic paste
- Salt & pepper to taste
- 2 tbsp oil
For Coconut Sauce
- 1 cup coconut milk
- 2 tbsp Thai sweet chili sauce
- 1 tbsp soy sauce
- 1 tsp red curry paste
- 1 tsp brown sugar
- 1 tsp lemon juice
Vegetables
- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 1 carrot (julienned)
- 2 green onions (chopped)
- Fresh coriander
Instructions
Step 1 – Prepare the Rice
Wash and soak basmati rice for 30 minutes.
Cook rice with salt until fluffy and separate. Set aside.
Step 2 – Cook the Chicken
Heat oil in a wok or pan.
Add chicken strips, garlic paste, chili flakes, soy sauce, salt, and pepper.
Cook until golden brown and slightly smoky.
Step 3 – Sauté the Vegetables
