Ingredients
For Rice
- 3 cups premium basmati rice
- Water for soaking
- 1 tbsp salt
- Pinch of saffron
For Lamb
- 1 kg lamb pieces
- 2 tbsp olive oil
- 1 onion (finely sliced)
- 1 tbsp ginger garlic paste
- Salt & black pepper to taste
Moroccan Spice Mix
- 1 tsp cumin powder
- 1 tsp paprika
- 1 tsp coriander powder
- ½ tsp cinnamon powder
- ½ tsp turmeric
- ½ tsp chili flakes
Vegetables & Extras
- 1 carrot (cubed)
- 1 bell pepper (sliced)
- ½ cup raisins
- ¼ cup almonds
- Fresh parsley
Instructions
Step 1 – Soak the Rice
Wash and soak basmati rice for 30 minutes.
Add saffron into warm water and set aside.
Step 2 – Cook the Lamb
Heat olive oil in a large pot.
Add onions and cook until golden brown.
Add ginger garlic paste and lamb pieces. Cook for 5–7 minutes until lightly browned.
Add salt, black pepper, and all Moroccan spices. Mix well.
Pour water and cook on low heat until the lamb becomes soft and tender.
Step 3 – Prepare the Rice
Boil water with salt and cook the soaked rice until 80% done.
Drain and set aside.
Step 4 – Cook the Vegetables
In a separate pan, lightly sauté carrots and bell peppers until slightly tender.
Add raisins and almonds for extra flavor and texture.
Step 5 – Layer the Dish
Place cooked lamb at the bottom of a large pot.
Add rice on top and drizzle saffron water over the rice.
Spread vegetables, raisins, and almonds evenly.
Cover tightly and steam on low heat for 20 minutes.
